Wild Boar Stew
Recipe Ingredients:
3 cups Wild Mushrooms, sliced
2 cups White Mushrooms, sliced
2 tb Oil
1 lb Wild Boar meat, cubed
1/2 lb Bacon, subed
2 Onions, sliced
1 clove of Garlic
1 can of Tomatoes
2 cups of meat or vegetable stock
3 cups dark beer
2 ts Cream
1 t Caraway seeds
1/2 ts Thyme
1 Bay leaf
Salt and Pepper
Recipe Instructions:

Soak the dried wild mushrooms overnight..

Wash and dice the wild boar meat and bacon. Heat
the oil in a large pan. Fry the bacon and then the wild boar in the
same fat.

Peel and dice the onion and garlic, add to meat and
fry together.

Season the meat with salt, pepper and thyme. Add
tomatoes. Pour in the stock and beer.

Rinse off the wild mushrooms and add these along
with the bay leaf to the meat.

Cover and braise for about 1 hour.

Clean and slice the white mushrooms and add them to
the stew 20 minutes before the end.

Add the cream. Simmer for a few minutes and serve.
